Cold smoking is one of the oldest food preservation techniques, which must have been discovered by chance when humans became sedentary and began to master fire, and observed that food exposed to smoke took longer to deteriorate.
At the same time, he discovered that the taste and texture of food also changed, acquiring nuances that were new to him.
The cold smoking technique has survived to this day, and although it is generally produced in specialized factories, it can also be done at home.
Surely you've tried top-quality smoked salmon and found that it's nothing like the packaged stuff sold in supermarkets, because it's incredibly soft, flavorful, and fresh.

It's actually very easy, using a cold smoker like this one.
Simply fill it with cold smoking wood dust (also from Weber), place it on top of the charcoal grate, and light it using the outer coil.
Place the cooking grill on top, with the food you are going to smoke, and close the lid.
The times will depend on the food chosen, and its size.
