If you're already a beginner in charcoal barbecue cooking, it's time to take it to the next level: indirect cooking.
Do you know her?
Indirect cooking means that the food is not placed above the heat source, but adjacent to it.
It is used for roasting, stewing, and smoking, but also simply to prevent meat from drying out, for example when roasting a beef steak.
Thus, there are two types of indirect cooking: roasting or baking, and 50/50.
Grilling/Baking on a Charcoal Barbecue:
1 - Light the briquettes with your chimney starter (1/3 of the chimney filled with briquettes)
2- Remove the cooking grill
2 - Pour the briquettes into the baskets
3 - Place each charcoal basket aside, leaving a space in between
4 - Place an aluminum tray with water inside in the free space.
5 - Put the cooking grate back on
6 - The piece of meat you are going to roast should be placed on top of the tray with water
Weber 50/50 Method on a Charcoal Barbecue:
1 - Light the briquettes with your chimney starter (1/2 of the chimney filled with briquettes)
2 - Pour the briquettes into the baskets
3 - Place the two baskets to one side, leaving the other side free
4 - Place an aluminum tray with water inside in the free space.
5 - Put the cooking grate back on
6 - Mark the meat first over direct heat, and then set it aside so that it can finish cooking.
With a little practice, you'll be making delicious roasts and grills cooked to perfection. We recommend getting a digital thermometer to read the internal temperature of your food (Weber has several models available); it's undoubtedly the key to success.
