Smoking on a gas barbecue
It is also possible to smoke on a gas barbecue, using indirect cooking.
This technique consists of placing the piece of meat away from the heat source, turning off one or more burners.
1) If we have a small barbecue, with only one burner, we simply reduce the power and use a tray to move the food away from the grill.
2) If we have a two-burner barbecue, we turn off one of them and place the food on top.
3) If our barbecue has more than two burners, we turn off the ones in the center, and regulate the others according to the desired temperature.
Using this technique, we can make spectacular roasts and smoked foods on our gas barbecue.
Using wood chips, we recover the authentic smoky flavor of traditional wood-fired barbecues in a very simple and practical way.
Simply soak the wood chips in water, wine, beer, or juice for at least an hour. After that time, drain them and place them inside the smoker box.
Close the smoker box lid and place it on top of the Flav-R-Wave bars, or on top of the grill , near the lit burner. Close the grill lid.
Little by little, the shavings will release a smoke laden with aroma, which will infuse the meat with a subtle smoky flavor.
Choose wood chips that best match the type of meat you're grilling. Strong woods, such as oak or mesquite, are ideal for tough lamb and beef; softer woods, such as fruit woods, are perfect for chicken, vegetables, and fish.
