What is the difference between briquettes and charcoal?
Charcoal is obtained by slowly burning wood logs in a low-oxygen environment; briquettes are obtained by compacting a mixture of charcoal and binders, which produces slower combustion, less smoke, and lower temperatures than conventional charcoal.
Thus, briquettes take longer to ignite - about 20 minutes - but provide a long and constant combustion, up to 3 hours.
Therefore, they are ideal for grilling or smoking, when we need the embers to stay lit for several hours, at low or moderate temperatures.
On the other hand, if we want to grill hamburgers or steaks, charcoal offers a faster ignition - about ten minutes - and a stronger fire, which will also extinguish more quickly.
In conclusion, it's not a question of whether briquettes are better or worse than charcoal. It simply depends on the type of cooking we want to do.

How many briquettes to use?
The answer also lies in the type of cooking you are going to do.
Thus, for a medium-sized barbecue (Ø57 cm), you'll need about 40 briquettes for direct cooking. However, if you're using indirect cooking, you'll need fewer: about 30 briquettes for the first hour, and add 6 or 7 for each additional hour of cooking. If you're planning on smoking, the amount of briquettes will naturally be even smaller.
Also play with the ventilation valves to control the temperature.
You already know, more oxygen means more combustion. To light the charcoal and keep it at maximum temperature, leave the lid open; to grill, close the lid; to smoke, partially close the lid's vents.
