If you're already starting to master the technique of cooking on a charcoal barbecue, expand your experience by using wood chunks to smoke your roasts.
Contrary to popular belief, a smoked meat doesn't have to be an orange-colored piece of meat with a completely different flavor than the original.
We smoke the meat to give it a different touch and to intensify its flavor.
So the question is:
Which smoking wood should you choose?
First of all, you should know that some woods are unsuitable for smoking: recycled woods that may contain chemicals; and resinous woods, such as pine or cypress.
Weber wood chips and chunks are all 100% natural, and specifically designed for smoking certain foods.
That is to say, there are some softer woods, with mild aromas, and others that are stronger, with more intense aromas.
In the case of American hickory (hickory), it is a strong wood, with quite intense aromas and therefore suitable for beef, pork and poultry.
Simply add a few pieces of hickory wood to your charcoal grill when grilling using indirect cooking.
What is indirect cooking?
It essentially involves placing the charcoal briquettes on one side of the grill, and the food on the other. This way, the meat doesn't receive the direct impact of the fire, but instead, the heat moves in a circular motion, creating an oven-like effect.
It's important not to add too many briquettes, as the temperature will rise too much. It's best to start with just a few (1/3 of the firebox) and you'll have time to add them later.
If you're grilling for more than 30 minutes, remember to place an aluminum tray of water next to the briquettes to maintain humidity and low temperatures.
Large pieces of wood are ideal for long barbecues, due to their slow combustion.
