If you ask any expert how to cook the perfect ribs, they'll tell you: first by smoking them at low temperatures, then wrapping them in aluminum foil to finish grilling them.
The Broil King rib roaster takes this second step and perfects it, taking it to the next level.
It is a cast iron container, which creates an oven effect inside that keeps the ribs moist , cooking at a moderate temperature , and in their own juices.
Inside the container, we find a small stainless steel grill that raises the ribs, separating them from the base of the container. Pour a little water, juice, red wine, or beer onto this base to moisten and flavor the meat.
This way, the ribs are steamed, rather than stewed, as is the case when they are wrapped directly in aluminum foil.
Just by using this container, you'll get perfectly grilled ribs, with all their tenderness and juiciness, in less than an hour.
However, if you have the time, we recommend following these steps to cook some truly extraordinary ribs.
How to cook the perfect ribs
1. Preparation: Use a sharp knife to separate the outer membrane attached to the meat. Remove it.
2. If using wood for smoking, soak the chips in water beforehand, for at least an hour before cooking. Drain them and place them in the smoker.
3. Light the grill for indirect cooking. If you have a two-burner grill, leave one off. If you have a three-burner grill or more, turn off the center burners. The desired temperature is about 105°C . Place the ribs over the unlit burners and let them smoke for 3 hours .
4. It's time to use the Broil King rib roaster. Pour your chosen sauce inside, such as orange, ginger, soy, honey mustard. The amount of sauce shouldn't reach the top of the mini stainless steel grill (you don't want to boil the ribs). A little is enough. Place the ribs upright. Close the grill lid and place it on the grill, or on the Flav-R-Wave bars, above the turned-off burner. Close the grill lid. The ideal temperature is 149°C , and the cooking time is about 60-90 minutes .
You'll know they're ready when the meat pulls away from the bone and separates from it just by touching it. Then it's time to give them the finishing touches.
5. Remove the ribs from the grill and coat them with marinade (you can use this Broil King silicone basting brush ). Grill them over direct heat, turning them over and over, for about 5 minutes. You can use a rib rack or place them directly on the grill.
The result is ribs that are charred on the outside, intensely colored and aromatic, and tender, melt-in-the-mouth meat that falls right off the bone. A meat lover's dream, made real on your barbecue.
